Lemon Glazed Blueberry Breakfast Donuts

Had a serious coffee and donut craving and I just had to oblige. I would have preferred these donuts to be with almond flour, but I ran out and was too lazy to hike all of one block to Trader Joe’s 🙂 oh well, next time!


For the donuts:

    1 cup whole wheat flour (or any other flour)
    1 egg
    1/4 cup almond milk
    1/3 cup maple syrup
    2 Tbsp coconut oil
    1 Tbsp apple sauce
    1 Teaspoon vanilla extract
    1/4 teaspoon baking soda
    Handful of blueberries
    Pinch of cinnamon
    Pinch of nutmeg
    Pinch of salt


  • 3 Tbsp powdered sugar
  • Juice of half a lemon
  • Lemon zest of half lemon


  • 1.) For the donuts, mix wet and dry ingredients separately. Once mixed thoroughly, combine all wet and dry ingredients together, folding in the blueberries at the very end. Fill mixture into lightly greased donut mold.
  • 2.) Bake donuts at 350 for 12-15 mins.
  • 3.) Combine all ingredients for the glaze in a low bowl. Once donuts are removed from the oven and cooled, dip each donut into the glaze and set on a cooling rack so that the excess glaze drips off.
  • Enjoy with a hot cup of coffee 🙂
