Lately it feels like every single person I know is getting engaged or married. With all these impending weddings, I am feeling the need to be a little more regimented about my diet (key phrase: “FEELING the need”..Actually acting on it is a different story altogether). This has been so difficult to do lately with my hectic work schedule. These past few weeks, I was provided lunch by my company during training. Of course, the lunch was buffet style and I have literally started feeling like a college student around free food. I honestly wonder when free food will stop being so damn irresistible..
Cooking with matcha is seriously my new thing. It adds this earthy, rustic flavor to every dish and really tones down the sweetness. I’m a huge fan! This time, I switched up an old recipe and included matcha and rosewater (my second favorite ingredient) . I am so beyond sold on this… To be honest, I had heard from so many people that I need to steer clear of desserts for a while and focus on whipping up some savory dishes. But of course, my sweet tooth led me here once again and I’m so happy it did. Rosewater and matcha might be my new favorite pairing. These energy bites are so tasty, they make me forget about all the *free* decadent chocolate cakes in the buffet line. If you do happen to try these out, I’d love to hear how yours turned out!
What you’ll need..
– 10-15 Medjool Dates
– 1 cup Almonds
– 2 Tbsp Cacao nibs
– 1 1/2 Tbsp Rose Water
– 2 Tbsp Matcha powder (1 Tbsp for mixture and 1 Tbsp to roll bites in prior to serving)
Put it Together..
– Blend together all ingredients (except the 1 Tbsp of Matcha used for rolling)
– Mold mixture into balls the size of ping pong balls
– Spread 1 Tbsp of Matcha on a plate and roll each ball in powder until coated green
