Smoky Beet Burgers

And just like that MDW is upon us 😱 That only means one thing..BBQ! These smoky beet burgers are just amazing and the best part is, they’re super healthy. I wasn’t going to post these because i was just trying them out but they turned out so amazing I just had to share! Super crispy on the outside and soft and juicy upon that first bite. Basically the perfect burger!

This recipe makes about 6-7 patties

Ingredients for the patties:

⁃ 1 cup skinned and grated raw beet

⁃ 1/2 medium sized red onion chopped

⁃ 1 cup chopped mushrooms

⁃ 3 cloves garlic

⁃ 1/2 a can of refried beans (or a cup of cooked beans)

⁃ 1 Serrano chili (finely chopped or grated)

⁃ 1.5 teaspoons dark miso paste

⁃ 2 Tbsp BBQ sauce (optional but adds a great smokiness)

⁃ 2 teaspoons mushroom umame seasoning (or just salt is fine)

⁃ 3/4 cup rolled oats

⁃ 1/2 cup almond flour

⁃ 1/4 teaspoon Garam masala

⁃ Salt to taste

⁃ Pepper to taste

Burger Fixins (these are totally optional and up to you):

⁃ Burger buns, Sliced red onion, Sliced tomato, Spinach (or really any crunchy greens), Pepper jack cheese (or a few slices of avo), Mixture of Ketchup/mayo/hot sauce

Method:

⁃ Heat a medium sized skillet over medium-low heat and add some butter or olive oil. Once hot, add the garlic, chopped Or grated Serrano pepper, and chopped onion and sauté, seasoning with a pinch of salt, pepper, and Garam masala.

⁃ When the onions and garlic are soft – about 5 minutes – turn up the heat to medium and add the mushrooms. Add mushroom umame seasoning (or salt to your taste) and miso paste and cook until the mushrooms and onions are slightly browned and fragrant – about 3 minutes.

⁃ Remove from heat and add refried beans and mix until everything is nicely combined

⁃ Transfer the mushroom and beans mixture to a mixing bowl and add the oats, grated beet, almond flour, and BBQ sauce and mix until combined.

⁃ In the same skillet that you used for your mushrooms and onions, heat some olive oil over a medium flame.

⁃ Begin to form burger patties using your hands and carefully place each patty in the skillet over the heated oil. Cook for about 3-4 minutes on each side or until you see a beautiful golden crisp on each side.

⁃ If you’d like to add cheese to your burger, place a slice of cheese on the flipped side of the burger and cover the skillet for about a minute to allow the cheese to melt.

⁃ Lastly, build the burger as you please! We spread a little ketchup, mayo, and hot sauce on the toasted buns and assembled with all the other fixins!
