Avocado Mash (and some food for thought)

I honestly cannot believe it has taken me over 6 months to publish a new post. Work and life took over the reigns a little bit. It’s crazy to think about how much has changed in the last 6 months. I got a new job, witnessed the weddings of 2 of my best friends, unexpectedly lost someone very close to me, and am now about to embark on a new journey, with a new job, in a new city.. It has truly been a whirlwind of good, bad, and ugly. Having this week off between jobs (appropriately termed ‘funemployment’) has really been a time of reflection for me. Does everything really happen for a reason? Because sometimes it feels like bad things happen to good people and good things happen to bad people. We grew up believing that the good were always rewarded and the bad would always be punished. Who decides this stuff anyway? What is with these curveballs that life continues to throw at us? Why are we expected to just roll with the punches?

This post took a bit of a serious angle. But like I said, funemployment week has been quite the time for reflection! Anyway, some food for thought! And now to the actual food..

Avocado mash is such a classic breakfast/lunch/dinner item! I don’t think a recipe is even needed for something that simple! Here is how I played around with it..

Toast # 1

Avocado mashed on a piece of sourdough, with yellow tomatoes (because they’re pretty), calabrian chili peppers, and some salt and pepper on top! The calabrian chili peppers give it this amazing kick..I’m a huge fan!

Toast # 2

The classic avocado mashed on a piece of sourdough, with a fried egg on top, sprinkled with salt and pepper. So simple and always delicious!

One day, I’m going to throw a dinner party and have 25 different variations of avocado mash.. Imagine how colorful those pictures would be!
