I have never been happier to see a weekend end. Do you ever have days where you feel like nothing is going right? That is pretty much how this weekend felt. Instead of being a relaxing and much needed break, my family’s weekend was jam packed with recklessness, arguments, and some minor car trouble. The best part though was being able to laugh about our series of unfortunate events at the end of the night on Sunday. That, and the unexpected discovery of Italian food heaven on a deserted street in financial district NYC. Seriously, I don’t know how we were able to laugh it all off at the end of the day. Either we finally found that famous silver lining that is so often spoken about, or we just entered a state of utter delirium. Or maybe we had just exhausted all our other emotions and laughter was all that was left. But hey, that’s life right? There will always be not-so-great days no matter how hard you try to avoid them so *Cue Dumbledore* “Happiness can always be found even in the darkest of times, if one only remembers to turn on the light”.
The Italian gem we found in FiDi was called Da Claudio. I had no idea it existed until we stumbled upon it desperately in search for a decent meal at 10:00pm on a Sunday night in the most desolate part of Manhattan. I wish I took some pictures of the food, I would definitely have done a separate post just gushing over their perfectly cooked homemade Rosemary Pappardelle in a sundried tomato and fennel sauce and their Bucatini Arrabiata in the most fragrant spicy tomato sauce simmered with red wine. But this post is about the most simple and perfect spring pizza.
I topped a toasted millet flour roti (bought this frozen at the Indian store) with mashed avocado, lemon juice, golden beet, cabbage, pepitas, and some of the chili lime seasoning from Trader Joe’s. SO. GOOD. The best part is you can pretty much top it with anything you like. Plus it’s kind of fun coming up with different variations and seeing how all the flavors work together. It was the perfect light lunch and so quick and easy to assemble. Here’s how I did it:
What you’ll need…
1 Millet Flour Roti/Tortilla
1/2 Golden Beet
1 Tbsp Lemon Juice
Chili Lime Seasoning
- Toast the millet flour roti until crispy
- Mash the avocado on top of the roti and top with all other ingredients
- Enjoy 🙂
