What you’ll need for the base..
– 6-8 Medjool dates
– 1 cup almonds
– 1 tsp nutmeg
– Splash of vanilla extract
– 1 Tbsp pure maple syrup
Put it together..
– Blend together almonds in a food processor until they are broken down into tiny pieces. Mix in your dates, vanilla, nutmeg, and maple syrup. Blend until a moldable mixture has formed
– Cling wrap the inside of a medium sized square dish
– Take your mixture and press it evenly onto the bottom of the dish forming the base of your lemon squares
– Freeze base for 20 minutes
What you’ll need for the filling..
– 1/4 cup fresh lemon juice
– 1 banana
– 2 Tbsp melted coconut oil
– 1/2 cup cashews (soaked for an hour)
– 2 Tbsp pure maple syrup
– 1/2 tsp turmeric (For that lovely yellow color plus an extra antioxidant boost! )
– Lots of lemon zest
Put it together..
– Blend all ingredients together in a food processor until creamy (Don’t worry if the mixture is runny. It will set more once kept for cooling in the freezer)
– Remove your dish from the freezer and pour filling on top of chilled base
– Freeze lemon squares for about an hour until set
– Cut into sizeable pieces. Pulling on the cling wrap, remove lemon squares from the dish, serve on a plate, and Enjoy! 🙂
(Be sure to eat these soon after you remove them from the freezer! )
